Thanksgiving Weekend Is Upon Us

I'm not cooking a turkey this year, though I have done in a few past years. But even a small turkey leaves too much leftover -- I'm sick of turkey before I'm at the end of the soup and casserole, etc. And actually I prefer the taste of chicken to that of turkey. I did a roast chicken one year, maybe last year.

Instead, I have chicken in the crock pot for tonight. Extremely easy recipe, supposed to be baked, but I'm sure the crock pot will be just fine.

Oh, the recipe! It's just a can of cranberry sauce (I made my own last night, because it's so easy to do, takes about 10 minutes and tastes SO much better than the canned stuff), 1 cup of French dressing (I used low cal), 1 cup of water and 1 package of the ubiquitous dry onion soup mix. Just mix that up, pour it over the cut of chicken of your choice (good for 6 - 8 legs) and either bake for an hour or an hour and a half or like me, dump it into your slow cooker and go to work.

Think I'll cook up a bit of couscous with it, and some veggies.

Can't ask for easier than that

As for the long weekend, well, I'm still crossing my fingers for half-decent weather tomorrow morning, so I can go to the conservation area. As long as it's not raining, I'll go. Can't take pics in the rain with a digital camera unless you have someone to hold an umbrella over you or you rig up a device to attach your camera to said umbrella.

Tomorrow also is the day I celebrate Nicki's birthday; it's the date-of-birth listed on his adoption papers from the shelter, even though he was found at between 8 and 10 weeks of age. I'm going to pick up a little can of his favourite flavour of Almo (salmon and chicken--Almo is just meat with sufficient water for processing, no added nutrients, so is good only as a supplement or treat) and get him a new "stick" if I can find one. That is, a long wand toy. He doesn't care about the feathers and such on the end of the wands, he just likes chasing the "stick." LOL. If it's not raining after work today I'll pop into Global Pet Foods on my way home; if it is, I'll stop in tomorrow after the conservation area.

Sunday and Monday...Oh, I expect those will be housework days. LOL. I do have a telephone "date" with a dear friend for Sunday, probably in the evening. We haven't chatted in a few weeks, since prior to my dad's visit, and I know she needs to talk. We need to catch up!
