What? I have to cook again?!
So going low-carb (plus gluten and corn-free) means cooking protein. A lot of protein. I'm already sick of cooking, especially in this heat. My small open-concept living/dining area on the main level feels like an oven right now. Ha.
Since Friday afternoon, I've cooked trout, pork (twice--stir fry and then pork chops in my crock pot), chicken, and a crustless pumpkin "pie." Yeah, I know pumpkin's not 0 carbs, but gees, I love pumpkin and I'm not giving it up. (It's lower than sweet potatoes, though.) I've got turkey sausages out to parboil for a quick after-work supper tomorrow or Tuesday.
BTW, our Wal-Mart carries Maple Leaf's new nitrite-free bacon. Yum. Actually, our Wal-Mart carries a lot of great groceries at prices that are 25-30% less than other stores in the area. I know I call them the evil empire, but you really can't beat them, sad to say.
And I really can't think about how all these poor animals are raised for our food. It's only one of the many, many shameful things about human dominance on this planet. The bottom line is that I have to eat what works for my own body, and we don't all have access to free range protein--or can afford it.
Oh, and two days into this? I can't say I feel particularly energetic right now, especially because it's so hot in here, but my insides are quiet for the first time in...I don't remember how long. Which goes to show that I just can't process any grains at all.
But I'm not giving up my dark chocolate! In fact, I bought a large block of 72% cocoa chocolate yesterday too. That should last for a while...um, maybe a couple of weeks. :-P

A couple of years ago this little restaurant on my route home put in a garden. It's looking especially good this summer!
I found this sweet card at Chapters yesterday and bought it to put in a little frame and hang on a wall.

Give up on chocolate!!?? Jamais!! The darker the chocolate - the higher cocoa content - the better for you!! I'm sure I've read that somewhere scientific and proven!! Yay!

Don't forget, if you're not trying to lose weight (and you probably shouldn't try, until you are feeling better - which may be a while) that you are certainly able to eat pumpkin and sweet potato, even regular potato!
The only really essential thing to do just now is no grains, and very little dairy, and try to cut out the sugar.
This does NOT mean no chocolate - the darker the better!!!! :-)
I could/would not do any kind of eating plan that did not include chocolate :-)
It sounds like you are doing great. I am so impressed!
And, I love the pansies in jars - pansies were my Nana's favourite flower - they remind me of her.
