Friday Funnies
The first week of the new year is almost done and I'm so ready for spring! Only three+ months to go....
I should have taken the week off work; there were only two of us holding down the fort, as it were, out of eight. Might as well have kept the office closed!
Anyway, here are a few Pinterest "funnies" to start the new year.

Below: I've tried a number of recipes and almost everything has ended up in the compost bin. You can do gluten-free, you can do sugarless, and you can bake without eggs and dairy, but you just can't do all three together and have it anywhere close to the "real" thing, IMO.

I would love to use raw honey as a sweetener; I must ask my ND if I can go back to that. I'd had to stop using it, as it (along with other sugars) feeds SIBO. Things would taste better with it, though! :-)
BTW, I've actually enjoyed the week, I've been able to catch up without being inundated with Teams messages or emails! :-P
Our kitties are a mixed bunch—some attention seekers and others just vanish if strangers are here.

As for gluten free, I've found some pretty good GF products. Canyon Bakery bread is good and Tate's GF chocolate chip cookies and Good Thins Simply Salt crackers too. And I've been using lactose free whole milk for the last few months and I find it tastes just as good as regular whole milk. I don't have a problem with eggs or sugar... but can't do artificial sweeteners.
And you are right, these special foods are expensive. I once tried a box of GF cookies that cost about $7 and had to throw the whole box out... they were awful.
