Half a Pyjama Day and Weekend Cooking

I didn't actually have a whole pyjama day yesterday, had to get out of the house once the chores were done. So I bused up to Chapters and browsed around for a while, something I haven't done in a long time. Picked up a photography magazine and a few on-sale books then bused home....only to check my receipt and find I'd been charged twice for a $5 book. I debated letting it go -- it was only $5 -- but it bugged me enough that I hopped on the next bus and went back for my $5 refund. Plus tax. That 24 cents in tax made all the difference, of course.

Annie's been eating regularly, six times yesterday, a few bites at a time. Not enough to keep weight on, let alone gain, but a relief to see her eating regardless. Nicki's been picking fights with her, two days in a row in the basement, and he's had a "time out" both days, for almost an hour. Translation: I needed a time out. Annie too.

In the evening I dug out a pumpkin loaf recipe from an old church ladies' cookbook.

2 cups white sugar (I used a scant 1 cup and it was more than sweet enough for me)
1  1/4 cups oil
3 cups flour
2 tsp baking soda
1 tsp salt
1 cup nuts
4 eggs
20 ounces of pumpkin (I used one 796 ml can, about 7 ounces more than the recipe calls for)
2 tsp baking powder
2 tsp cinnamon
1 cup dates or raisins

(I actually didn't have the nuts or dates/raisins and it was still good. Next time I'll add raisins, but I'm not big on nuts in cakes/loaves.)

Bake in 2 loaf pans at 350F for 1 1/4 hours.

BTW, I found it amusing that there were no mixing instructions with the recipe. I guess it's assumed you know to beat the eggs and add the oil and sugar, then mix the dry and add. Well, that's what I did, at any rate!

I've got a Tex Mex chicken recipe in the oven now, but the chicken's taking FAR longer to cook than the directions indicated, so I'll forgo posting the recipe until I see how it comes out, whether I'd make it again.

Awww snow makes everything look so pretty!! These are such gorgeous pics - very tranquil!!

No instructions on how to mix the ingredients?!!? I'd probably just put them all in one bowl and whisk!!! LOL!! Did you enjoy the cake?!?! I hope so!!! Sounds yummy (and another recipe to add to my eternal question of "what does one do with pumpkin?!?").

Oh my favourite grocery store is forever and a day overcharging me. At first I let it go and then I thought, Hang On!! It's a big rich huge company and I'm giving them free money!!! So these days I always check my receipt and always ask for the difference (when there is one). So well done you!

lovely pics! and with that 5$, it may bea minor sum, but if the shop charged that sum wrongly with many customers it would in the end be a substantial sum for them, and that notion i don't like... although hopping on the bus to go back and all that, that time and work is of course also worth some money. when you philosophize over matters:)

the loaf sounds delish - although just as you did, would be better with less sugar (sugar conspiracy hey) and usually, like you, i'm no fan of raisins in bread.
